Les Navettes de Saint-Victor are one of the culinary treasures of Marseille.  So called for their resemblance to little boats, Les Navettes have been prepared with love in Marseille for centuries.

Traditionally flavored with orange blossom , Les Navettes de Saint-Victor are now scented with all kinds of spices .

In Marseille on February 2 every year, locals celebrate the famous Navettes de Saint-Victor. Their name comes from Navis , the ship in Latin, and shape recall the boat of St. Lazarus, Martha and Magdalene, who have landed in Marseille. 

These little delicacies are sold on the steps of the Abbey of St. Victor in the centre of Marseille and are even blessed in the church!

The recipe:

Ingredients

  • 500g flour
  • 1/2 cup of orange blossom water
  • 20g yeast
  • 150g Sugar
  • 1 whole egg white and a second beaten (keep the yolk!)
  • Zest of one lemon
  • 1 pinch of salt

Preparation

First mix all the flour and yeast in a large bowl. Then add the other ingredients and mix well.

Let the dough rise for one day, add the lemon zest.

Mould the dough into the shape of small boats by scoring the dough lengthwise.

Glaze with the remaining egg yolk .

Bake for 20 min in a hot oven.
